Last night I had the best supper. It was just so tasty for some reason.

I had leftover tuna casserole, a baked potato I cooked in the convection/toaster oven, green beans with onions, and corned bread. Ivy loves her cornbread.

I think part of the reason it tasted so good was that I started baked potatoes a different way.

How To Bake Potato In Toaster/Convection Oven:

  • Wash your baking potato and dab it dry
  • Use a fork to pierce holes all around it
  • Spray the potato with either butter or olive oil
  • Sprinkle with salt (I used sea salt)
  • Put potato directly on convection oven rack
  • Cook at 350 degrees about 30 minutes on each side

Remove from oven when baked. Cut or squish the top of the potato carefully. Garnish with butter, sour cream, yogurt, spices, or other condiments.

You can probably cook your potato in less time. But I wanted it nice and soft on the inside and crisp on the outside, so just use your own judgment about that.

I know my meal doesn't look like what you see on the cooking blogs. I don't stage my food. I was just about to eat and what you see is what you get.

I couldn't have been more pleased with it had it been steak. Sometimes a meal just really appeals to your taste buds.

I've eaten this for two nights with one more to go. Which I will eat tonight. That's a lot of mileage out of a small tuna casserole.

I might even make this for my Thanksgiving meal. I'm not one of those people who feel they have to eat a traditional holiday meal.

What The Kitties Have Been Doing:

Here's Ivy giving Gracie the old stink eye. She's up on her cupboard and she doesn't want Gracie attempting to join her.

Ivy's look says: "Don't even think about it, Gracie."

Gracie pays no mind. This morning I saw Gracie jump on Ivy with Ivy laying on the floor. It sure was funny seeing this kitten trying to hold Ivy down.

They're run and they've wrestled and made weird sounds and flipped and flopped on the floor. Gracie will pause every once in a while to chase her tail.

In the mornings Gracie has this kind of devilish look in her eyes.

A Problem With Gracie & The Litter Box:

One problem I'm having is that Gracie doesn't seem to know to cover her poop in the litter box. And boy does it stink to high heaven. So I have to rush in and scoop it out and add baking soda.

I looked this up and it said that some don't learn from their mama to do this. And Gracie was pretty young when they rescued her.

I sure do hope she figures it out soon. Any suggestions?

I'm looking to buy a new laptop soon. This one has just about pooped out. I tend to wear them out because I use them so much. The touchpad doesn't work well anymore.

I've made it over 3 years with this one. Typically it's less time than that. I sure would like to find a laptop that would last longer.

I'm just trying to decide which brand I want to buy. I've been researching this online for quite a while. Reading reviews and looking at prices.
